After a fun weekend in New York for my birthday, it’s nice to be home in sunny Florida. I love an adventure, but in my heart I’m a homebody. I love the space we’ve created here at Marsh Rabbit Run.
Mr. Dasch-ing and I often scrap our plans for heading out, and choose instead to sit lakeside in the Adirondack chairs, or have cocktails and snacks right at at our kitchen counter.
Upon returning home, I was in the mood for a cocktail I had whipped up for our guests over the Thanksgiving holiday. I’m sharing two festive options, one for the punch bowl and one for a glass on the go. Hope you enjoy it!
- 1 750-ml bottles chilled brut Champagne ( I used pink to add extra color)
- 1/2 cup white rum
- 1/4 cup Simple Syrup
- 1 1/4 cups pomegranate juice
- Kumquats for garnish, orange slices are fine too
- Pomegranate seeds for garnish
- Fresh mint leaves
Combine Champagne, rum, simple syrup and pomegranate juice in punch bowl or large pitcher. Add enough syrup to sweeten to your taste. I prefer mine a bit more dry than sweet. Mix in orange slices, pomegranate seeds, and freshly picked mint leaves. This recipe makes enough to serve 8.
Quick & Easy Pomegranate Champagne Cocktail
For a quick holiday version of this punch, simply fill the bottom of a champagne glass with chilled pomegranate juice, drop in a sugar cube and top with champagne. Garnish with a raspberry and orange twist.
